Tasty Bites

  • 1 lb Pork(I use boneless pork short rib) Chopped
  • 1/2 Cup Vegetable Oil
  • 1 lb Boneless Chicken Thighs Chopped
  • 1 lb Smoked Sausage (conecuh-cajun obv)
  • 1 Onion
  • 1 Bell Pepper
  • 1 Bunch Green Onion
  • 2 Sticks of Celery
  • 1 Tablespoon minced garlic
  • 1 Teaspoon of salt
  • 1.5 tbsp king craw 
  • 3 tsp better than bouillon (or any other bouillon
  • 2 Cups Rice - long grain
  • 3 & 1/2 Cups Water - add 1 tsp de pollo
  • 1 Tablespoon of Hot Sauce
  • 2 Tablespoon Kitchen Bouquet

Instructions

  1. First, start out by heating a cast iron pot over medium heat.
  2. Prep your vegetables (dice) and move to the fridge.
  3. Season the pork well with salt and pepper.
  4. Add the vegetable oil to the pot and sear the pork in the vegetable oil
  5. sear for a few then turn the heat to low and simmer for 10-15 minutes stirring every so often.
  6. Meanwhile chop your chicken and sausage.
  7. At the 15 minute mark, add the chicken and sausageand cook for another 10 minutes 
  8. At this point preheat your oven to 300°
  9. After 10 minutes, Remove all of the meat so that there's nothing left but the drippings.
  10. Add the onion, bell pepper, green onion, celery, garlic, salt, creole seasoning, beef bouillon and sauté until completely soft, roughly 25 minutes.
  11. Add everything back in and stir
  12. Bring the mix to a boil, cover and put in the oven
  13. Cook an hour then rest 5-10. If you want it to dry up a touch, add a towel under the lid.
